Varieties and flavor


Varieties are also distinguished by color. Thunnus alalunga, with its white flesh and pinkish nuances, is known as white tuna, while the albacares variety, the most common in the major food industry, is known as yellowfin.

The secret? Processing at the fishing site


When the fish reaches the canning factory from the port, we start the initial cleaning by hand, and cutting to separate off the belly. The flesh is then cooked gently to preserve its nutritional properties, and then cut into steaks and filets. The filets are then arranged individually by hand in the jars, taking care to keep them intact. The olive oil is not added until the end, to preserve the tun a without covering the taste.
