Our Oils undergo a rigorous chemical examination in order to comply with much stricter standards than those established by law. For example, for acidity, which in EVO must not exceed 0.8%, we have set a maximum limit of 0.3%, because the lower the value, the better the oil.
This Oil, with its unmistakable aroma and flavor, is the result of two essential factors:
our direct relationship with olive farmers able to guarantee the best growing and milling techniques so as to supply us with fresh extra virgin oils made from oils picked when perfectly ripe and pressed immediately, and our ability to blend these extra virgin olive oils to strike a sophisticated balance. This is the only way to make our Olive Oil Fruttato.
The combination of two cultivars from southern Italy - the distinctly fragrant CORATINA and the more gentle, sweeter BIANCOLILLA - makes our EVO Fruttato the perfect choice for those who like a distinct, intense flavor, able to bring unmistakable character to every dish.
