Carnaroli is the king of Italian white rices, the most prestigious of the country’s varieties, with a medium-large, long grain and a high amylose content that gives it a creamy texture.

Where risotto comes from

We have the Po Plain, and specifically the Lombardy region, to thank for the invention of risotto, because it was here, starting from the 14th century, that rice growing was first established and spread. The first documentary references to boiled rice dishes date to the 16th century, but the authentic risotto recipe – with the rice cooked in the pot and the gradual addition of stock until fully absorbed – dates to the 18th/19th centuries.
