The soft amaretti date back to the end of the 18th century, probably to the House of Savoy, and originated in Mombaruzzo, a small town in the Monferrato area of Piemonte. Characterized by the apricot kernels and the pleasantly soft texture, they proved an immediate success, becoming a popular pastry whose recipe was closely guarded and handed down through the generations.
