Chocolate Fondant Cake

Ingredients (For 6 people):
½ pound of cooking chocolate, 4 TBS of flour, 5 TBS of sugar, 6 TBS of Carli Pure Olive Oil, 1/4 TSP salt, 5 eggs, 4 TBS of water.
Melt the chocolate with the water. Beat the egg yolks with the sugar until the mixture becomes lighter in color, add the melted chocolate, the flour and the oil. In an other bowl, lightly salt the egg whites and beat them until they become stiff and fluffy. Blend together the two mixtures and pour into an oiled and lightly floured cake mould. Bake in a pre-heated oven at 350° F for 20 mins. “Fondant” means “melting” and this describes exactly the consistency of this cake. If you would prefer your cake to be a firmer consistency, just add 5 mins to the cooking time. Serve with a scoop of mint ice-cream to create a sophisticated dessert without the butter content!
