The process

A combination of cooked grape must from selected vines and wine vinegar. Left to mature and refine for 12 months in fine wood barrels and barriques (oak, chestnut and cherry).


Wine vinegar, cooked grape must.
Contains sulphites.




With distinctive notes of cooked must and woody and vanilla nuances, it has an exquisitely sweet-and-sour flavor. The delicate, slightly vinegary taste and the bright brown color make it a dressing you cannot afford to be without.

Store in a cool, dry place.

Our Balsamic Vinegar of Modena P.G.I. is the perfect dressing for mixed salads, but for a truly special touch of flavor, try adding it to the juices of red meat at the end of the cooking process.
