Keep it from curdling

To make our Mayonnaise, we’ve come up with a machine like a large food processor, for the sous-vide mixing of the egg yolks, lemon juice and vinegar, to keep the temperature stable. Then, just as you might at home, we gradually add just the right amount of oil, because the absorption capacity of fresh yolks is variable, and if we take our eyes off it, fifty kilos of mayonnaise could curdle in an instant.
