Our Pandolcino is a small, round cake, with a highly original shortcrust pastry that contains no butter, only our Olive Oil. This soft, golden-brown specialty is packed with sweet raisins and candied orange and lemon, and scattered with pine-nuts. a sweet, inviting recipe, with a characteristic fragrance reminiscent of freshly baked sweet bread, enhanced by the gentle citrus notes of the filling.

Legend has it that the Italian fruitcake Pandolcino was created thanks to Doge Andrea Doria, who announced a baking competition to come up with a rich, nourishing cake that would keep for a long time, so it could be enjoyed by sailors during their voyages.

How we make them


Like all the best pastry specialties, our Pandolcino is packed with craftsmanship skill, loving care and age-old expertise handed down through the generations. The ingredients, all of the finest quality - starting with our Olive Oil, which completely replaces the butter - are dosed and mixed by hand. The mix is then divided into two small, round loaves, shaped individually by hand and then baked until golden brown.
