Tuna mousse
Tuna mousse is a very versatile condiment that can be served in lots of different ways: on pieces of toasted bread as an appetizer, as a sandwich filling or as a dip for crudités.

Preparing tuna mousse

To prepare the tuna mousse, put the ricotta, the rinsed and desalted capers, the chopped White Tuna Filets in Olive Oil, the grated zest of half a lemon and a tablespoon of water (to help make the tuna and ricotta mousse more fluid) in a blender.

Blend until smooth and frothy, taste, adjust the seasoning and transfer the light tuna mousse to a bowl.

If you wish to serve the tuna mousse on slices of bread, decorate each slice with a caper.
