To make the puff pastry rolls with pistachio pesto, preheat your oven to 450°F. Unroll the puff pastry and sprinkle a layer of ricotta cheese on it, using a spoon to help you. Add a layer of our Pistachio Pesto Sauce and sprinkle with grated Parmesan cheese.
Gently roll up the dough and let it rest for 5 minutes in the freezer, then cut it into slices of about 1/2 inch thick and place them on a baking sheet lined with baking paper.
Bake in the oven for about 15 minutes, until golden brown.
Remove from the oven and let the puff pastry rolls with pistachio pesto sauce cool before serving.
