Mustiness or humidity is a typical odor of oil obtained from olives on which fungus and yeasts have formed in abundance, because they have been kept for too long in a closed environment (for example on nets or in bags).

The smell of musty oil resembles the typical odor of a damp cellar.

This is a defect that has an irreversibly negative impact on the quality of the oil, declassifying it as low-quality. For this reason, it is essential to preserve the olives properly to guarantee the successful production of quality olive oil.
