Lightweight custard
Created to perfectly enhanced the special taste of Dolce di Natale

METHOD

Heat a saucepan of milk. Then cut the vanilla pod with a small blade. Collect the seeds by scraping the pod. Immediately add the seeds and the vanilla pod to the milk.

When the milk is hot, turn off the gas and leave the milk to settle for at least five minutes. Pour Extra Virgin Olive Oil Delicato into a small pan. Add the starch and sugar, while mixing thoroughly to get a uniform mix.

Over a very low flame, pour the strained milk little by little. Whip. When this cream is ready, as a special final touch add a dash of chocolate and the grated peel of half a lemon.

Serve cold, together with a slice of Olive Oil Dolce di Natale.
