Rice salad with mayonnaise

A fresh, original, colorful dish

Method

To prepare the rice salad with mayonnaise, clean the vegetables and chop them into cubes. Sauté the spring onions and peppers in a pan with a drizzle of our Pure Olive Oil. After a couple of minutes, add the zucchini, season with salt and cook over a lively heat for 5 minutes. Add the chickpeas, cook for a further couple of minutes and then remove from the heat.

Boil the rice in plenty of salted water (check the recommended cooking times on the pace for the type of rice used), then drain al dente and rinse with cold water so as not to cook it further.

Add the rice to the vegetables, along with a drizzle of our Delicato Extra Virgin Olive Oil and some fresh chopped basil. Add two tbsps. of our Mayonnaise with Olive Oil to make the rice salad creamy.
