Method

This dish is quick, tasty, and perfect for a healthy lunch! Crack the eggs into a bowl, add a drizzle of Extra Virgin Olive Oil Fruttato and a pinch of salt. Beat well with a fork. Heat a pan with a bit of oil and pour in half the egg mixture. Cook until almost set, flip, and finish cooking. Repeat with the remaining mixture.

Now it’s time to fill your omelets: slice the Tuna and sun-dried tomatoes. Spread the Taggiasca Olive Spread on half of each omelet, then top with the Tuna, tomatoes, a few spinach leaves and pea shoots. These tuna omelets are great for a quick, flavorful, and protein-rich lunch!
