Divide the peaches in half, remove the stone and scoop out some of the pulp from the space left.
For the filling, chop up the pulp of the peaches, add the Amaretti Cookies, roughly crumbled and mix well. Add the chopped dark chocolate and mix again. Arrange the peaches in a lightly oiled oven dish with the scooped-out center facing upwards. Stuff with a few spoonfuls of the filling and bake at 180°C in a pre-heated oven for about 40 minutes.
Remove from the oven, dust with the icing sugar and serve hot!
