Oven baked Sea Bass
The delicate aroma of our Extra Virgin Olive Oil punctuates and amplifies each and every Mediterranean flavor.

METHOD

Scale, clean and gut the Sea Bass. Fill the inside of each fish with 2 tablespoons of Pesto and then place one of them on a large sheet of oiled aluminum foil. Cover with half the tomatoes sliced in 2, half the Pitted Olives and a clove of garlic. Drizzle with Extra Virgin Olive Oil, and then close the foil around the fish making a parcel. Do this again with the 2nd Sea Bass. Place the 2 parcels on a baking tray in an oven preheated to 350°F and cook for 30 minutes. To serve, simply open the parcels and drizzle with some Extra Virgin Olive Oil.
