Our secret

The finest olives, from the Italian leccino cultivar, harvested when perfectly ripe and processed immediately. During the first stage, they are dipped in brine and aromatized according to the traditional recipe from Liguria, with the addition of thyme, laurel and rosemary to the water and salt. The olives are then pitted and preserved in our Extra Virgin Olive Oil, which gives the product its gentle, delicate flavour, toning down the salty notes and bringing out the flavour and consistency of the fruit.
