The variety of eggplant we have chosen, harvested at the end of the summer, is a glossy violet/black colour, with white, not-too-watery pulp. It is popular for the small amount of seeds, thin skin and flavor.

Cut roughly into long pieces. Typical beige/brown color, with darker streaks from the grill; small pieces of parsley and chili pepper also visible.

 

CONSISTENCY

Firm, soft, fleshy consistency, typical of perfectly ripe eggplant. Thin skin.

 

AROMA AND FLAVOR

Typical aroma and flavor, with an extra-tasty touch added by the grilling process and the marinade with Balsamic Vinegar of Modena, flavored with herbs and chili pepper, and given a delicately rounded finish by our Olive Oil.
