Stoned olives 53,8%, extra virgin olive oil 41%, red peppers 5%, salt, chili 0,2%, aromatic herbs (thyme, bay leaves, rosemary). Acidity regulator: citric acid. 

The destoning process is completely automatic, nevertheless pieces of kernels or fragments may be found.  Store in a cool place away from light.

APPEARANCE AND COLOR

Medium-small size, elongated oval shape and with a smooth surface; light brown to black in color.

 

CONSISTENCY

Fleshy, soft yet firm, accompanied by soft pieces of red bell pepper.

FLAVOR

Tasty, just salty enough, with a pleasantly bitter olive aftertaste immediately softened by the naturally sweet pulp of the bell peppers.

Our secret

The finest olives, of the Italian leccino cultivar, harvested when perfectly ripe and processed immediately. During the first phase, which lasts 12 months, they are placed in brine, flavored according to the age-old Ligurian recipe, in which thyme, laurel and rosemary are added to the water and salt. The olives are then pitted and preserved in Extra Virgin Olive Oil, and lastly, the pieces of bell pepper and the chili pepper are added.
