During this slow cooking process, lasting up to 36 hours, with no thickening agents or caramel added, our Balsamic Vinegar is concentrated into its exquisitely thick consistency.

For the "Classic" Vinegar, the ageing in oak barrels and barriques is essential to develop the product’s complex organoleptic notes, especially the typical woody and vanilla aroma; for the “Thick” variety, the cooking stage is more important, because it is during this traditional process – in the open air, over a direct heat – that the product acquires its typical concentration, developing richly intense aromas and flavors reminiscent of fruit jams such as cherry and black cherry.
